DETERMINATION OF HEAVY METALS OF FOOD FROM COOKING UTENSILS

Abstract

Determination of Heavy Metals of food from cooking utensils, aimed to ascertain the heavy metal contamination of food from old and new aluminum pots, clay pots, and stainless steel pots. The presence and concentration of Cadmium, Chromium, Zinc, Lead, and Iron.it was determined using atomic absorption spectrophotometer (AAS). The experiment was carried out at a time interval of three months to determine the level of Heavy Metals leached into aluminum pot, clay pot with time. The result gotten were as follows Cadmium in aluminum pot are -0.5,-0.18, and -0.22. Chromium in aluminum pot  are -3.52, -3.40, and -2.32. Zinc in aluminum pot  are 0.13, 0.78, and 0.98. Lead in aluminum pot  are 0.14, 0.22, and 0.37. Iron in aluminum pot are 1.96, 1.78 and 1.63. Cadmium in clay pot are -0.43, -0.35, -0.31. Chromium in clay pot are -2.68, -2.65, and -2.63. Zinc in clay pot are 0.04, 0.07, and 0.30. Lead in clay pot are -0.19, -0.36, -0.49. Iron in clay pot are 1.41, 1.50, 1.57. Cadmium in stainless steel pot  are -0.12, -0.21, and -0.28. Chromium in stainless steel pot are -2.8, -2.76, and -2.70. Zinc in stainless steel pot are 0.07,0.05 and 0.05. Lead in stainless steel pot are 0.13, 0.04, and 0.02. Iron in stainless steel pot are 0.98, 1.12, 1.27. Their control sample was gotten as Cadmium (-0.17), Chromium (-2.91), Zinc (0.44), Lead (-0.13) and Iron (1.32) It was concluded that as the pots were continuously used, the presence of some metals increased while some decreased and it was finally recommended that neither aluminum pot, clay pot, nor stainless steel pot should be used for a very long period of time
